XFX Radeon HD4890 Extreme 1GB (Later on im going to be getting another of these!! it works out cheaper than getting 1 GTX 295 and its got better performance)
    http://www.pccasegear.com/index.php?main_page=product_info&cPath=193_877&products_id=12208
Intel Core i7 920 (this is what pea&ham Has!)

I think you could do a little bit better, here are some suggestions:

A really nice mtherboard, cheaper and does everything just as good as the rampage. BTW you do know that the mobo you chose was mATX not ATX?
    http://www.pccasegear.com/index.php?main_page=product_info&cPath=138_711_775&products_id=12012

    OR if you want mATX:
    http://www.pccasegear.com/index.php?main_page=product_info&products_id=12174

Also the cooler master V8 is very fiddley to install and doesn't have the best performance compared to other coolers in the same price range:
    i suggest this one:
    http://www.pccasegear.com/index.php?main_page=product_info&cPath=207_23_769&products_id=12193
same price but a bit better for performance, just throw on a good fan and your set! You could also get the black cooler for $5 more if you want?
    http://www.pccasegear.com/index.php?main_page=product_info&cPath=207_23_769&products_id=12322

Also i would say wait untill the new 5000 series or 300gtx series graphics cards come out. Then you can either get the 4890's cheeper or get a 5890 or gtx360 for hopefully the same price.

    REMEMBER!! these are just suggestions.

It doesn't matter wether you overclock or not. when it dies you'll probably be wanting a new cpu by then. (this only applies to overclocks under 5ghz Wink )

Yeah that what im doin with my 920 4ghz is really easy from what ive heard and you only need your stoke cooler.

I don't think that would be a good idea, especially if you aare planning on keeping it at that all the time. try for 4ghz and see how you go.
